My name is Henok Fentie.
I run a brewery in Sweden.
Ingredients are the most important aspect of brewing.
So we're actually quite picky when selecting ingredients.
We will try to go to the producer as often as we can
to meet and understand what challenges and opportunities
they're working with in order to make sure
that A, we get the best possible ingredients,
but also in order to create some consistency over time.
Our job as brewers is to create a process
that tampers as little as possible with the ingredients
and the quantities that goes into it.
We brew one beer specifically with all organic produce.
In order to keep the organic
and the non-organic production separate,
we track ourselves.
But we also get help tracking because we get inspections.
Out of respect for the consumer,
but also out of respect for the growers
that have given us these products,
I think it's very important that 100%
that goes into our organic products are actually organic,
which in our case they are.
What sustainability means to me is it's our very existence.
We're living off the land, so to speak,
in terms of the grains that we brew with,
the hops that we brew with.
And I think brewers need to up the game
around organic brewing,
not just do it for the sake of it,
but actually allow these raw materials
to shine the way that they do.
