First of all, we are farmers.
We take care of our olive trees orchards.
We nourish them, we irrigate them,
we control all the ecosystem where we are based.
Regulations are year after year increasing.
We are receiving continuously auditors, external controls,
so we are learning every day how to improve
and to do things better day after day.
I mean, it's easy to make olive oil.
It's not easy to make an extraordinary
and a high-quality olive oil.
We are very strict and we have implemented
so huge amount of internal regulations
to search the maximum quality of our product.
We certainly know exactly each day
what plot we are collecting,
the different trees that we have been harvesting,
and, of course, when those olives arrive to the mill.
When we mill them, what day, what hour, what temperature,
how many minutes we have been grinding
in the malaxing machine, the paste,
and when we have filtered this olive oil
and in what deposit we have stored
the extra virgin olive oil.
So traceability is perfect.
We have reached the highest quality
within the last 2,000 years.
